I've been in Kansas for a little over 24 hours and I am already craving enchiladas again. Although it isn't the same as getting them from a restaurant, here is a recipe for Chicken Enchiladas from the Food Network website.

Painting with a Twist is on my list of things to do in the next few weeks!
